We start building on Monday...and I mean it this time! After two stop work orders, ( oooh, la-di-da, don't I sound official ), Casa Bamboo will break ground July 18th. The numbers are in, the budget has been approved, and the stars are in alignment! In the meantime, I'm revelling in the culinary bounty of land and sea...I call it research and development. This is a red snapper, caught that day, and filleted in a style called 'talla'. The fish is cut in a way that allows it to open up like a travel brochure. Slathered in a sauce made with guajilla chiles and placed on a charcoal BBQ...I was in pescado heaven.
