Mango Madness

El camino to Playa Blanca is lined with mango trees and at this time of year they are burgeoning with the bright red and yellow fragrant fruit. I could no longer continue to drive past this tantalizing sight, so I pulled the car over and began foraging with earnest. 20 minutes later my bolsa was bulging ( my bag was full ). Back at the casa, marvelling at my bounty, I began to realized, the heat, coupled with the humidity, was ripening the fruit before my eyes, so, either start eating them NOW, or, make mango sorbet…it was the best mango sorbet EVER!
